Jesus Simal-Gandara, é catedrático en ciencia dos alimentos na Universidade de Vigo, onde dirixe o Grupo de Investigaciós Agro-ambientais e Alimentarias (AA1, grupo de referencia competitiva).

As súas principais liñas de investigación son o transporte de contaminantes no sistema aire-solo-auga-cultivo e o efecto dos tratamentos post-colleita sobre os compostos antioxidantes polifenólicos.

Na actualidade traballa os proxectos: “Efecto de los fungicidas sobre la microbiota fermentativa para la obtención de vino y vinagre de uva blanca” (PID2019-105061RB-C21) do Ministerio español de ciencia e “Sustainable and cost-effective production process for the upcycling of olive, grape and nut by-products into 4 natural and healthy ingredients for nutraceutical and cosmetic applications (UP4HEALTH) concedido por H2020-BBI-JTI-2019 (2020-2023).
