‘Vangarda Primaria. Cociñando o territorio’ Conference by Lucía Freitas

CISPAC welcomes Galician Michelin-starred chef Lucía Freitas.

On Monday 23 January, CISPAC will receive the visit of the chef from Compostela, Lucía Freitas, head chef of the retaurant A Tafona, awarded with a Michelin star in 2018, as well as 2 Soles in the Repsol Guide.

During her speech, the chef will present the main conceptual lines that form the backbone of her work, which she herself defines as Vanguardia Primaria, a philosophy that seeks to highlight the identity potential of her land in haute cuisine, focusing on the essentials and highlighting the role of the true protagonists of the Galician gastronomic ecosystem (producers, sellers and cooks).

She will also present the Amas da Terra project, which is taking its first steps, and which aims to pay a well-deserved tribute to the value chain that sustains the gastronomy of Galicia and all the gastronomies of the world: the women producers, cooks, livestock breeders, shellfish farmers, entrepreneurs and wise women of the countryside.

The event will take place from 11:00 a.m. in Room 10 of the Fontán Building, Cidade da Cultura,
